Story of the Dish

Coffee belongs to the daily rhythm of Italian life, and a serious coffee dessert must taste of real espresso rather than generic sweetness with a brown color. Budino al caffè gives espresso a fuller, custard-like body than coffee panna cotta.

The challenge is balance: too much coffee thins the custard and becomes harsh; too much sugar erases espresso’s bitterness; too much starch makes the dessert heavy. Freshly brewed espresso keeps the aromatic identity clear.

Ingredients

  • 1 3/4 cups whole milk

  • 3/4 cup heavy cream

  • 1/2 cup freshly brewed strong espresso

  • 1/3 cup granulated sugar

  • 3 tbsp cornstarch

  • 4 large egg yolks

  • 1 tsp pure vanilla extract

  • 1/8 tsp fine sea salt

  • 1 tbsp unsalted butter

  • Softly whipped cream and dark chocolate shavings, optional

Preparation

  1. Brew strong espresso immediately before starting.

  2. Whisk sugar, cornstarch, and salt. Add yolks and loosen with about 1/2 cup milk.

  3. Heat remaining milk and cream until steaming and temper the yolks gradually.

  4. Return to the saucepan and whisk until thickened, then simmer 1 to 2 minutes.

  5. Remove from heat and whisk in espresso, butter, and vanilla.

  6. Strain, portion into six glasses, cool briefly, cover, and refrigerate at least 3 hours.

Professional Technique

Add espresso after the custard leaves direct heat to preserve aroma. The bitterness is part of the desired flavor and should not be buried under sugar.
