Delicate, buttery, and instantly recognizable by their beautiful flower shape and center hole, Canestrelli are among the finest traditional butter cookies in Italy. Their origins date back to the Middle Ages, when they were prepared in the regions of Liguria and Piemonte, although versions also exist in Lombardy.
What makes authentic Canestrelli unique is the use of hard-boiled egg yolks, a centuries-old pastry technique that produces an exceptionally fine, sandy texture unlike any other cookie. Instead of becoming crisp like ordinary shortbread, Canestrelli literally melt in your mouth, leaving behind the rich flavor of butter and vanilla.
These cookies are traditionally served during holidays, weddings, baptisms, and family celebrations, but they are equally popular alongside an afternoon espresso or cappuccino. Their elegant appearance, generous dusting of powdered sugar, and incredibly delicate texture have made them one of Italy's most iconic tea cookies.
The secret to exceptional Canestrelli lies in patience: the dough must remain cold throughout the entire process, and the cookies should never be overbaked. Properly made, they remain pale with only the slightest hint of golden color around the edges.

2½ cups (315 g) all-purpose flour
1 cup (225 g) unsalted European-style butter, very cold
¾ cup (90 g) powdered sugar
3 hard-boiled egg yolks
1 raw egg yolk
1 teaspoon vanilla bean paste or vanilla extract
Zest of ½ organic lemon
Pinch of fine sea salt
¼ cup (35 g) cornstarch

Preparation
Prepare the Egg Yolks
Place the eggs in cold water and bring them to a gentle boil.
Cook for 10 minutes.
Cool completely in ice water.
Remove the yolks and press them through a fine mesh sieve until they become a fine powder.
This step is essential for the famous melt-in-your-mouth texture.
Prepare the Dough
Combine the flour, cornstarch, powdered sugar, and salt.
Add the cold diced butter and rub it into the dry ingredients until the mixture resembles very fine sand.
Mix in the sieved cooked egg yolks.
Add the raw egg yolk, vanilla, and lemon zest.
Mix only until the dough comes together.
Do not knead.
Flatten into a disk, wrap tightly, and refrigerate for 2 hours.
Shape the Cookies
Preheat the oven to 325°F (165°C).
Roll the dough to approximately ¼ inch (6 mm) thick.
Using a traditional flower-shaped Canestrelli cutter (about 2½ inches / 6 cm), cut the cookies.
Use a small round cutter to remove the center.
Transfer to parchment-lined baking sheets.
Refrigerate for another 15 minutes before baking.
Bake
Bake for 14–16 minutes.
The cookies should remain pale.
Only the bottom edges should develop a light golden color.
Allow them to cool completely before moving, as they are extremely fragile while warm.
Dust generously with powdered sugar.

Never overbake. Authentic Canestrelli are almost ivory in color, not dark golden.
