Story of the Dish


Elegant, aromatic, and beautifully refined, Linzer Cookies are among the world's most recognizable sandwich cookies. Their origins trace back to the Austrian city of Linz, home of the famous Linzer Torte, considered one of the oldest documented cakes in Europe. During the Austro-Hungarian Empire, these delicate cookies spread throughout Northern Italy—especially Trentino-Alto Adige, Friuli Venezia Giulia, and Veneto—where Italian pastry chefs embraced them and incorporated them into their own baking traditions.

Unlike classic Italian pasta frolla, Linzer dough is enriched with finely ground almonds, which give the cookies a richer flavor and a delicate, crumbly texture. Warm cinnamon, fresh lemon zest, and fragrant vanilla create a beautifully balanced aroma, while the center is traditionally filled with tart raspberry or red currant preserves that contrast perfectly with the buttery cookie.

Today, Linzer Cookies are found in many Italian pastry shops, particularly during Christmas and the winter holidays, although their elegant appearance makes them popular year-round. Their signature cut-out window reveals a jewel-like layer of bright red jam, making them one of the most beautiful cookies on any pastry tray.


Ingredients

Makes: 24 sandwich cookies

For the Linzer Dough

2 cups (8.82 oz) all-purpose flour

1 cup (3.88 oz) almond flour

1 cup (7.94 oz) unsalted European-style butter, softened

¾ cup (3.17 oz) powdered sugar

2 large egg yolks

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

Zest of 1 organic lemon

Pinch of fine sea salt

Filling

1 cup (10.58 oz) premium raspberry preserves

Traditional alternatives:

Red currant preserves

Black currant preserves

Apricot preserves

For Finishing

Powdered sugar


Preparation

Prepare the Dough

In a large bowl, whisk together the flour, almond flour, powdered sugar, cinnamon, and salt.

Add the softened butter and mix until the dough becomes sandy.

Incorporate the egg yolks, vanilla, and lemon zest.

Mix only until a smooth dough forms.

Flatten into a disk, wrap tightly, and refrigerate for 2 hours.

Cut the Cookies

Preheat the oven to 340°F (338°F).

Roll the dough to approximately ⅛ inch (3 mm) thick.

Using a 2½-inch (2.36 in) round or fluted cookie cutter, cut an even number of cookies.

Using a small heart, flower, or round cutter, remove the center from half of the cookies.

Transfer to parchment-lined baking sheets.

Refrigerate for 15 minutes before baking.

Bake

Bake for 10–12 minutes.

The cookies should remain lightly golden around the edges while staying pale in the center.

Cool completely on a wire rack.

Assemble

Dust the cut-out cookies generously with powdered sugar.

Spread approximately 1 teaspoon of raspberry preserves over each whole cookie.

Place the sugared cookie on top and gently press until the preserves become visible through the decorative opening.

Allow the cookies to rest for 30 minutes before serving.


Chef Tips

Use blanched almond flour  for the smoothest texture and the lightest color.

Chill the dough thoroughly before cutting to maintain sharp, elegant edges.

Dust the top cookies with powdered sugar before  assembling to keep the jam perfectly clean.

Choose preserves with a high fruit content for the brightest flavor and color.

For an authentic Northern Italian touch, add a tiny pinch of ground cloves together with the cinnamon.
