Story of the Dish

This is a luxurious Italian-style omelette built around three ingredients that naturally belong together: eggs, Fontina, and black truffle.

Fontina melts beautifully without overpowering the eggs, creating a silky, almost fondue-like center. Fresh black truffle brings its characteristic earthy aroma, but the key is restraint: the truffle should perfume the omelette rather than bury the delicate flavor of the eggs.

The omelette should remain pale and tender on the outside and soft, creamy, and slightly baveuse inside.

Ingredients

  • 3 large eggs

  • 1½ oz Fontina cheese, finely diced or thinly sliced

  • ½ oz fresh black truffle

  • 1 tbsp unsalted butter

  • 1 tbsp heavy cream, optional

  • ⅛ tsp fine sea salt

  • Freshly ground black pepper

  • 1 tsp freshly grated Parmigiano Reggiano

  • ½ tsp extra-virgin olive oil, for finishing

Preparation

1. Prepare the truffle.Gently clean the black truffle with a soft brush. Do not soak it in water.

Using a truffle slicer, shave several very thin slices for the final presentation. Finely grate a small portion to use inside the omelette.

2. Prepare the eggs.Crack the eggs into a bowl.

Add the salt, a little freshly ground black pepper, and the heavy cream if using.

Whisk gently until the yolks and whites are completely incorporated. Do not whip excessive air into the mixture.

Add a small amount of finely grated black truffle directly to the eggs.

3. Cook the omelette.Melt the butter in an 8-inch nonstick skillet over medium-low heat.

Once the butter begins to foam—but before it browns—pour in the eggs.

Stir continuously and gently with a silicone spatula while moving the pan back and forth.

As small creamy curds begin to form, continue cooking until the bottom is just set while the surface remains visibly moist.

4. Add the Fontina.Reduce the heat to very low.

Arrange the Fontina down the center of the omelette.

Sprinkle over the Parmigiano Reggiano and a little more finely grated black truffle.

Allow the cheese to begin melting for about 20–30 seconds.

Do not wait until the eggs are completely cooked.

5. Fold and rest.Fold one side toward the center and gently roll the omelette over itself.

Transfer immediately to a warm plate, seam-side down.

Allow it to rest for about 30 seconds. The residual heat will melt the Fontina while keeping the eggs beautifully creamy.

Michelin-Style Presentation

Shape the omelette into a smooth, elongated oval.

Brush the surface with a very thin layer of melted butter to create a natural gloss.

Shave fresh black truffle directly over the warm omelette immediately before serving. The heat will release its aroma.

Finish with a few delicate Fontina shavings if desired, several drops of extra-virgin olive oil, and a tiny amount of freshly ground black pepper.

Avoid excessive garnishes. The black truffle should be immediately recognizable as the star of the plate.

Wine Pairing

Franciacorta Satèn

Its fine bubbles, creamy texture, and fresh acidity work beautifully with the eggs and melted Fontina while allowing the earthy aroma of the truffle to remain prominent.

For a still wine, try an elegant Alto Adige Chardonnay.

Chef Tips

  • Use real Fontina Valle d'Aosta whenever possible.

  • Slice the truffle extremely thinly; aroma is more important than thickness.

  • Never aggressively cook fresh truffle.

  • Add most of the truffle after cooking so its perfume isn't lost.

  • Keep the pan temperature moderate—the omelette should have almost no browning.

  • Don't completely melt the Fontina before folding. Residual heat will create the creamy center.

  • Serve immediately. A truffle omelette loses much of its magic as it cools.

Chef Gianluca's Recommendation

For this dish, temperature is everything. Fold the omelette while the eggs still look slightly too soft and shave the black truffle over it while it is piping hot. The combination of residual heat, molten Fontina, butter, and fresh truffle creates the aroma you're looking for.
