Perfect roasted potatoes should have a deeply golden, crisp exterior and a soft, almost creamy center. The professional method uses parboiling, thorough drying and roughening the surface before roasting. That broken exterior creates thousands of small edges that become exceptionally crisp in the oven.

Ingredients
3 lb Yukon Gold or Russet potatoes (1.36 kg)
4 tbsp extra virgin olive oil (60 ml)
4 garlic cloves, lightly crushed
3 sprigs fresh rosemary
1 1/2 tsp fine sea salt (8 g), plus more for the cooking water
1/2 tsp freshly ground black pepper
1/4 tsp baking soda (1 g), optional but highly recommended
Preparation
Preheat the oven to 450°F (230°C).
Peel the potatoes, or leave part of the skin on if preferred.
Cut them into evenly sized pieces, approximately 1 1/2 to 2 inches (4 to 5 cm).
Place the potatoes in a large pot and cover with cold water.
Season the water generously with salt and add the baking soda.
Bring to a boil, then reduce to a steady simmer.
Cook for approximately 8 to 10 minutes, until tender around the edges but still able to hold their shape.
Drain thoroughly and allow steam to escape for 2 to 3 minutes.
Return the potatoes to the dry pot and shake vigorously for several seconds to roughen the outer surface.
Add olive oil, salt and black pepper and toss gently.
Transfer to a large roasting tray in a single layer with space between pieces.
Roast for 20 minutes without moving them.
Turn each potato and add the crushed garlic and rosemary.
Continue roasting for another 25 to 35 minutes, turning once more if necessary, until deeply golden and crisp.
Season and serve hot.
Professional Technique
The parboil and roughen method hydrates the exterior starch. Shaking the drained potatoes creates a coarse surface that dehydrates and crisps dramatically in the oven.
A small amount of baking soda makes the water slightly alkaline and accelerates surface breakdown. Too much can create an unpleasant flavor and make the potatoes collapse.
A 450°F (230°C) oven gives the exterior enough heat to brown while the center remains tender.

Yukon Gold gives a creamy interior and holds its shape well.
Russet produces an especially crisp, fluffy result but is more fragile after parboiling.
Red potatoes hold their shape very well but generally do not become as fluffy inside.
