
Melanzana Arrosto con Ricotta allo Zafferano, Pomodoro Affumicato e Capperi Croccanti (Italian Saffron Ricotta Eggplant)

This dish is built around the transformation of a whole eggplant. The eggplant is roasted aggressively until the skin is nearly black and the flesh collapses into a silky interior. Sheep’s milk ricotta infused with saffron supplies richness and floral depth, smoked tomato brings acidity, and fried capers provide salinity and crunch.

Ingredients
For the roasted eggplant
4 small Italian eggplants, about 7 oz each (200 g each)
3 tbsp extra virgin olive oil (45 ml)
2 garlic cloves
4 thyme sprigs
Fine sea salt
Freshly ground black pepper
1 tbsp lemon juice (15 ml)
For the saffron ricotta
12 oz sheep’s milk ricotta (340 g)
1 generous pinch saffron threads, about 1/8 tsp (0.15 g)
1 tbsp hot water (15 ml)
1 tbsp extra virgin olive oil (15 ml)
1 oz Parmigiano Reggiano, finely grated (28 g)
1 tsp finely grated lemon zest
Freshly ground white pepper
Fine sea salt
For the smoked tomato and capers
1 lb ripe plum tomatoes (450 g)
1 tbsp extra virgin olive oil (15 ml)
1 small garlic clove
1 tsp red wine vinegar (5 ml)
1/2 tsp sugar (2 g), only if needed
3 tbsp salt packed capers (35 g)
1/2 cup neutral frying oil (120 ml)
For the glaze and finishing
1/2 cup light vegetable stock (120 ml)
1 tbsp unsalted butter (14 g)
1 tsp aged balsamic vinegar (5 ml)
Fresh basil leaves
Fresh mint leaves
A few saffron threads
Extra virgin olive oil
Freshly ground black pepper
Preparation
Bloom saffron in hot water for at least 20 minutes. Drain and sieve ricotta, then mix with saffron infusion, olive oil, Parmigiano, lemon zest, white pepper and salt until smooth enough to hold a quenelle.
Roast pierced and lightly oiled eggplants at 450°F (230°C) for 30 to 40 minutes, turning several times, until the skin is very dark and the flesh nearly collapses.
Rest 10 minutes, peel away roughly half the charred skin while leaving structural sections attached, then season with lemon juice, salt and black pepper.
Roast halved tomatoes at 400°F (205°C) for about 20 minutes. Cook with garlic another 10 minutes, blend, strain and season with vinegar and only enough sugar to correct acidity if necessary.
Smoke the tomato sauce briefly with culinary hardwood smoke for 60 to 90 seconds. Taste before repeating; it should suggest fire, not barbecue.
Rinse salt packed capers, soak about 15 minutes, dry completely and fry at 350°F (175°C) for 20 to 30 seconds until they open and crisp.
Reduce vegetable stock by half, add balsamic and whisk in cold butter. Caramelize selected surfaces of the roasted eggplant in a hot pan, add glaze and baste for about 1 minute.
Spoon a narrow amount of smoked tomato onto a warm plate, place the glazed eggplant across it, add a quenelle of saffron ricotta beside it, scatter crisp capers and finish with basil, mint, black pepper, saffron and olive oil.
Professional Technique
The eggplant must cook far beyond the point where many cooks would normally stop so the flesh becomes custard like. Enough skin remains to hold the interior together. Ricotta stays separate so saffron and dairy remain distinct, while smoked tomato supplies a second roasted note balanced by acidity. Crisp capers act almost like seasoning crystals.

Wine Pairing
Etna Bianco DOC, particularly Carricante based wines, offers mineral structure and acidity for roasted eggplant and tomato. Its restrained citrus character supports saffron, while volcanic salinity connects with capers and sheep’s milk ricotta. Serve at 48°F to 52°F (9°C to 11°C).
Storage & Reheating
Saffron ricotta can be made up to 24 hours ahead and smoked tomato up to 3 days ahead. Eggplants may be roasted several hours before service, but final glazing should happen at the last moment. Crisp capers are best prepared the same day and kept dry.
