Preparation
Preheat the oven to 450°F (230°C). Peel the potatoes if desired and cut into evenly sized pieces about 1 1/2 inches (4 cm).
Place in cold water, season with salt and add the optional baking soda.
Bring to a boil, reduce to a steady simmer and cook for 7 to 9 minutes, until the exterior is tender but the center remains firm.
Drain thoroughly, let steam escape for about 3 minutes and shake the potatoes in the dry pan to roughen the surfaces.
Add the olive oil, season lightly with salt and spread on a large metal baking tray in a single layer.
Roast for 20 minutes without moving, turn and continue roasting for about 15 minutes until already golden and crisp.
Combine the finely grated Pecorino Romano with freshly cracked black pepper.
Remove the tray, let the aggressive sizzling subside for about 30 seconds, then toss the hot potatoes with the Pecorino mixture.
Return to the oven for 5 to 8 minutes, watching carefully so the cheese adheres and caramelizes without burning.
Finish with additional black pepper and optional thyme or lemon zest. Serve immediately.
