Orange should brighten almond and honey, not dominate them. Fresh zest provides perfume while a small quantity of candied peel adds concentrated citrus flavor and texture.

Story of the Dish

Orange and almond appear together throughout Italian pastry because citrus provides freshness and a slight bitterness that balances rich nuts. In torrone, the combination is particularly effective because honey already carries floral complexity. The challenge is preserving volatile orange oils and controlling the moisture introduced by candied peel. The finished nougat should taste first of almond, then honey, with orange arriving clearly but late.

Ingredients

  • 2 1/2 cups whole blanched almonds, about 12 oz (340 g)

  • 1 cup high quality honey, about 12 oz (340 g)

  • 1 1/4 cups granulated sugar, about 8.8 oz (250 g)

  • 1/4 cup water (60 ml)

  • 2 large egg whites, about 2 oz (60 g)

  • 1/8 teaspoon fine sea salt

  • Finely grated zest of 1 large orange

  • 1/3 cup finely diced candied orange peel, about 2.5 oz (70 g)

  • 1/2 teaspoon pure vanilla extract

  • 2 sheets edible wafer paper

Preparation

  1. Prepare an 8 inch square mold with parchment and wafer paper.

  2. Toast almonds at 300°F (150°C) for 10 to 12 minutes until fragrant and lightly golden. Keep them warm.

  3. Dice candied orange peel finely. If it is wet with syrup, blot it lightly so excess moisture does not soften the nougat.

  4. Whip egg whites and salt to soft peaks. Heat honey to 245°F to 250°F (118°C to 121°C), stream into the whites and beat until pale and thick.

  5. Cook sugar and water to 275°F to 280°F (135°C to 138°C). Pour slowly into the honey base and continue mixing until elastic.

  6. Add vanilla and fresh orange zest near the end. Fold in warm almonds and candied orange immediately.

  7. Transfer to the mold, cover with wafer paper and press to an even slab. Rest overnight at room temperature before slicing.

Professional Technique

Fresh zest and candied peel perform different jobs. Zest contributes volatile essential oils and therefore belongs near the end of the hot process. Candied peel is more stable but can carry excess syrup, which must be controlled. The white nougat should remain the structural binder, while almonds provide the dominant texture.
