Tubetti Risottati con Cozze, Zucchine, Pecorino Sardo e Menta


Story of the Dish


Among Italy's most comforting seafood dishes are pasta cooked almost like risotto, where every drop of broth becomes part of the final sauce. This technique, known as risottare la pasta, is widely used by great Italian chefs because it creates a naturally creamy texture without cream or thickeners.

This recipe combines the briny sweetness of fresh mussels with delicate zucchini, finished with aged Pecorino Sardo DOP and fresh mint. At first glance, cheese and seafood may seem unusual, but Sardinian cuisine has always embraced bold yet balanced combinations. A small amount of well-aged Pecorino Sardo adds depth and umami without overpowering the shellfish.

The result is an elegant pasta with incredible texture: creamy, fresh, aromatic, and unmistakably Mediterranean.


Ingredients

Serves 4

Pasta

1 lb (15.87 oz) bronze-cut tubetti

Sea salt

Mussels

4 lb (3.97 lb) fresh Mediterranean mussels

3 tbsp extra virgin olive oil

2 garlic cloves, lightly crushed

¾ cup Vermentino di Sardegna

Fresh parsley

Zucchini

2 medium Italian zucchini

2 tbsp extra virgin olive oil

1 shallot, finely diced

Finish

2½ oz (2.47 oz) aged Pecorino Sardo DOP, finely grated

Fresh mint leaves

Lemon zest

White pepper

Premium extra virgin olive oil


Preparation

Prepare the Mussels

Scrub the mussels thoroughly.

Remove the beard from each shell.

Discard any broken or open mussels that do not close when tapped.

Heat olive oil in a large pot.

Add the crushed garlic.

Cook gently for about one minute.

Pour in the Vermentino.

Immediately add the mussels.

Cover tightly.

Cook over high heat for 3–4 minutes, shaking occasionally until the shells open.

Discard any unopened mussels.

Strain the cooking liquid through a fine sieve lined with cheesecloth to remove any sand.

Remove about two-thirds of the mussels from their shells.

Reserve both the mussel meat and the cooking liquid.

Prepare the Zucchini

Dice one zucchini into very small cubes.

Slice the second into thin half-moons.

Heat olive oil in a sauté pan.

Cook the shallot gently until translucent.

Add the zucchini.

Cook over medium heat for about 5 minutes, keeping them vibrant and slightly firm.

Cook the Pasta

Bring a large pot of lightly salted water to a boil.

Cook the tubetti for 5 minutes only.

Transfer them directly into the sauté pan with the zucchini.

Begin adding the hot mussel broth one ladle at a time, exactly as you would prepare risotto.

Continue stirring constantly, adding more broth whenever needed.

The pasta should slowly release its starch while absorbing the seafood broth.

This process takes another 6–7 minutes, until perfectly al dente and naturally creamy.

Finish the Dish

Remove the pan from the heat.

Fold in the shelled mussels.

Add the grated Pecorino Sardo little by little while stirring continuously.

Finish with finely chopped fresh mint, grated Amalfi lemon zest, white pepper, and a generous drizzle of premium Sardinian extra virgin olive oil.

Arrange a few mussels still in their shells on top for presentation.

Serve immediately.


Chef Tips

Always strain the mussel broth carefully—it is the soul of the dish.

Cook the zucchini until just tender so they retain their color and freshness.

Add the Pecorino off the heat to prevent it from becoming stringy.

Mint should be used sparingly; it should lift the dish, not dominate it.

The risottare  technique is essential. Avoid draining the pasta completely and let it finish cooking in the mussel broth.

A final drizzle of premium extra virgin olive oil ties together the sweetness of the mussels, the freshness of the zucchini, and the richness of the Pecorino.
