Beetroot is naturally sweet and earthy, which makes it powerful but easy to turn predictable. This version pushes the vegetable toward a darker, more mineral profile by roasting it in a salt and ash crust, then balancing that intensity with smoked goat cheese, blood orange and pistachio.


The idea is to keep the beetroot dense, glossy and concentrated, not soft and watery. Goat cheese should bring smoke and acidity rather than heaviness, while blood orange cuts through the earthiness and gives the plate freshness.

Ingredients


For the Beetroot

  • 4 medium red beets, about 2 lb (900 g) total

  • 2 cups coarse sea salt (550 g)

  • ½ cup food safe vegetable ash or culinary charcoal ash (50 g)

  • 4 egg whites

  • 2 tbsp water (30 ml)

  • 4 thyme sprigs


For the Smoked Goat Cheese

  • 5 oz fresh goat cheese (140 g)

  • 2 tbsp heavy cream (30 ml)

  • 1 tbsp extra virgin olive oil (15 ml)

  • ½ tsp fresh lemon juice (2.5 ml)

  • Pinch of salt


For the Blood Orange

  • 2 blood oranges

  • 1 tsp extra virgin olive oil (5 ml)

  • 1 tsp red wine vinegar (5 ml)

  • Pinch of sea salt


For the Pistachios

  • ⅓ cup unsalted pistachios (45 g)

  • 1 tsp extra virgin olive oil (5 ml)

  • Pinch of salt


For the Barolo Vinegar Glaze

  • ¼ cup Barolo or other dry red wine (60 ml)

  • 2 tbsp red wine vinegar (30 ml)

  • 1 tsp honey (7 g)

  • 1 tsp cold unsalted butter (5 g)


For Finishing

  • Freshly ground black pepper

  • A few small beet leaves, if available

  • Extra virgin olive oil


Preparation


1. Prepare the Salt and Ash Crust

Preheat the oven to 375°F (190°C). Wash the beets without peeling. Mix coarse salt, food safe ash, egg whites and water to the texture of wet sand. Spread a base layer in a roasting dish, add beets and thyme and seal completely with the remaining mixture.


2. Roast the Beets

Bake for 60 to 80 minutes depending on size. The beets should be tender but not collapsing. Rest 10 minutes, break the crust, brush away salt and ash, rub off skins while warm and cut into large wedges.


3. Prepare the Smoked Goat Cheese

Blend goat cheese, cream, olive oil and lemon juice until smooth. Season lightly. Smoke gently with mild wood for 2 to 3 minutes if using a smoking setup, keeping the effect subtle.


4. Prepare the Blood Orange

Remove peel and pith, cut clean segments, reserve some juice and dress the segments lightly with juice, olive oil, red wine vinegar and salt.


5. Toast the Pistachios

Toast at 350°F (175°C) for 6 to 8 minutes and crush only lightly so most pieces stay large.


6. Prepare the Barolo Vinegar Glaze

Reduce wine, vinegar and honey gently until lightly syrupy, then whisk in cold butter. Keep it sharp and vinous rather than sweet.


7. Final Assembly

Arrange beetroot in a loose composition, add smoked goat cheese in small quenelles or compact spoonfuls between the pieces, add blood orange segments and pistachios, then finish with restrained Barolo glaze, pepper, beet leaves and extra virgin olive oil.


Professional Technique


Salt crust roasting creates a sealed environment that traps steam while drawing surface moisture and concentrating flavor. Culinary ash adds a darker mineral note without directly coating the flesh because the skin remains on during roasting.


Only food safe culinary ash should ever be used. Never use ash from treated wood, charcoal briquettes, fireplaces or unknown sources. The beetroot should not taste literally like ash.

A lighter Barbera d'Alba also works well. For white wine choose a structured Etna Bianco whose mineral character suits salt roasted beetroot and citrus.


Storage & Reheating


The beetroot can be roasted up to 2 days ahead and stored peeled in an airtight container. Bring to room temperature or warm very gently before serving.


Smoked goat cheese keeps for 2 days, the wine glaze for 4 days and toasted pistachios should be stored separately and dry. Prepare blood orange shortly before service.
