Jerusalem artichoke has a naturally earthy, nutty sweetness that becomes much deeper when cooked slowly in fat and then finished at high heat. The technique here is deliberately closer to confit than standard roasting.


Chestnut honey brings bitterness as well as sweetness, rosemary reinforces the earthy profile, and Pecorino adds salinity and depth. The finished dish should feel concentrated and savory, not sugary.

Ingredients


For the Jerusalem Artichokes

  • 2 lb Jerusalem artichokes (900 g)

  • 1 cup extra virgin olive oil (240 ml)

  • 4 garlic cloves, lightly crushed

  • 3 sprigs rosemary

  • 4 sprigs thyme

  • 1 tsp kosher salt (6 g)

  • ½ tsp freshly ground black pepper (1 g)


For the Chestnut Honey Glaze

  • 2 tbsp chestnut honey (40 g)

  • 2 tbsp vegetable stock (30 ml)

  • 1 tbsp apple cider vinegar (15 ml)

  • 1 tbsp unsalted butter (14 g)

  • 1 small rosemary sprig

  • Pinch of sea salt


For the Pecorino

  • 2½ oz aged Pecorino, finely grated or shaved (70 g)


For the Rosemary Crumb

  • ½ cup fresh breadcrumbs (35 g)

  • 1 tbsp extra virgin olive oil (15 ml)

  • 1 tsp finely chopped rosemary

  • 1 small garlic clove, finely grated

  • Pinch of salt


For Finishing

  • 1 tsp lemon zest

  • Extra virgin olive oil

  • Freshly ground black pepper

  • Flaky sea salt


Preparation


1. Confit the Jerusalem Artichokes

Preheat the oven to 300°F (150°C). Scrub Jerusalem artichokes thoroughly without peeling. Keep small ones whole and halve only large pieces. Place in a roasting dish with olive oil, garlic, rosemary, thyme, salt and pepper. Cover tightly and cook for 40 to 50 minutes until tender but still holding shape.


2. Cool Briefly

Remove from the oil, drain well and rest for about 10 minutes so the exterior dries slightly. Strain and reserve the aromatic oil.


3. Prepare the Chestnut Honey Glaze

Warm chestnut honey, stock, vinegar and rosemary gently for 2 to 3 minutes. Remove rosemary, whisk in butter and season. The glaze should be bittersweet and acidic rather than dessert like.


4. Crisp the Jerusalem Artichokes

Increase the oven to 450°F (230°C). Lightly press larger pieces to crack the surface, brush with reserved confit oil and roast for 10 to 15 minutes until deeply golden. Brush with honey glaze only during the final 2 to 3 minutes.


5. Prepare the Rosemary Crumb

Toast breadcrumbs in olive oil until golden, then add garlic and chopped rosemary for the final 30 seconds and season lightly.


6. Final Assembly

Arrange Jerusalem artichokes directly on the plate in a loose irregular composition. Spoon a small amount of glaze over selected pieces, add rosemary crumb, finish with Pecorino, lemon zest, olive oil, black pepper and flaky sea salt.


Professional Technique


Confit cooking surrounds the Jerusalem artichokes with fat at low temperature, allowing the interior to soften without drying. The second high temperature stage creates the crust.


Separating tenderization from crisping is what produces a soft center and deeply roasted exterior without collapse. A short rest between stages also improves the final crust.


Chef Tips

  • Keep smaller Jerusalem artichokes whole whenever possible.

  • Do not peel unnecessarily.

  • Chestnut honey is useful because it has a natural bitter edge.

  • Use the glaze sparingly.

  • Do not discard the aromatic confit oil.

Wine Pairing


Verdicchio dei Castelli di Jesi Classico Superiore works very well because its acidity and mineral character balance olive oil, Pecorino and honey.


Vermentino di Gallura DOCG is another excellent choice. For red wine, choose a lighter Chianti Classico with fresh acidity.


Storage & Reheating


The Jerusalem artichokes can be confit up to 2 days ahead and refrigerated in a little strained confit oil. Bring close to room temperature before final roasting.


The chestnut honey glaze keeps for 4 days. Keep rosemary crumb dry and separate.
