Carrots can become a serious fine dining side dish when their sweetness is controlled rather than amplified. This recipe uses dry Vermouth for herbal complexity, saffron for aroma and bitterness, ricotta salata for salinity, and pistachio for texture.


The carrots should remain whole or nearly whole, deeply roasted and glossy, with enough acidity to prevent the plate from becoming sweet.

Ingredients


For the Carrots

  • 2 lb young carrots, preferably with tops (900 g)

  • 2 tbsp extra virgin olive oil (30 ml)

  • 2 tbsp unsalted butter (28 g)

  • 1 tsp kosher salt (6 g)

  • ½ tsp freshly ground black pepper (1 g)

  • 2 sprigs thyme


For the Vermouth Glaze

  • ½ cup dry white Vermouth (120 ml)

  • ½ cup carrot juice (120 ml)

  • ¼ cup vegetable stock (60 ml)

  • 1 tsp honey (7 g)

  • 1 tbsp cold unsalted butter (14 g)

  • 1 tsp fresh lemon juice (5 ml)


For the Saffron

  • 1 generous pinch saffron threads, about ¼ tsp

  • 2 tbsp hot vegetable stock (30 ml)


For the Pistachios

  • ⅓ cup unsalted pistachios (45 g)

  • 1 tsp extra virgin olive oil (5 ml)

  • Pinch of sea salt


For Finishing

  • 2 oz ricotta salata (55 g)

  • 1 tsp finely grated lemon zest

  • A few carrot leaves, if available

  • Extra virgin olive oil

  • Freshly ground black pepper


Preparation


1. Prepare the Carrots

Preheat the oven to 425°F (220°C). Trim tops while leaving about 1 inch (2.5 cm) of stem, scrub thoroughly and peel only if necessary. Keep thin carrots whole and split only very thick carrots lengthwise.


2. Start the Roasting

Toss carrots with olive oil, butter, salt, pepper and thyme. Arrange in a single layer and roast for 20 to 25 minutes, turning once, until dark roasted areas develop while centers remain slightly firm.


3. Bloom the Saffron

Pour hot vegetable stock over saffron threads and infuse for at least 10 minutes until intensely golden and aromatic.


4. Prepare the Vermouth Glaze

Reduce dry Vermouth by about half. Add carrot juice and stock and reduce gently. Add saffron infusion and continue until the liquid coats a spoon. Add honey, remove from heat, whisk in cold butter and finish with lemon juice.


5. Glaze the Carrots

Brush nearly tender carrots generously with Vermouth saffron glaze and roast for another 8 to 10 minutes, brushing once more until glossy with dark caramelized edges.


6. Toast the Pistachios

Toast at 350°F (175°C) for 6 to 8 minutes, cool and crush only lightly, keeping pieces relatively large.


7. Final Assembly

Arrange carrots in a long loose composition rather than a mound. Spoon a very small amount of glaze over selected carrots, grate or shave ricotta salata over the vegetables, scatter pistachios irregularly and finish with lemon zest, carrot leaves, olive oil and black pepper.


Professional Technique


The central technique is using glaze only during the second part of cooking. Carrots contain substantial natural sugar and carrot juice, Vermouth and honey add more. Roasting first removes surface moisture; glazing later creates concentration and lacquer without burning.


The carrots should retain some resistance. Overcooked carrots collapse structurally and become overly sweet.


Chef Tips

  • Choose carrots of similar thickness.

  • Use young carrots when possible.

  • Use dry Vermouth, never sweet Vermouth.

  • Do not use excessive saffron.

  • Add ricotta salata only at the end.

  • Keep pistachios relatively coarse.

  • Avoid decorating every carrot identically.

  • Using sweet Vermouth.

  • Applying glaze from the beginning.

  • Overcooking the carrots.

  • Using too much honey.

  • Boiling saffron aggressively.

  • Using fresh ricotta instead of ricotta salata.

  • Grinding pistachios into powder.


Wine Pairing


Vermentino di Sardegna works beautifully because its freshness and herbal Mediterranean character complement Vermouth and saffron while balancing the carrots' sweetness.


Fiano di Avellino is another excellent option. For something more mineral choose Etna Bianco.


Storage & Reheating


The carrots can be partially roasted up to 1 day ahead and refrigerated. Prepare the glaze separately and finish at 425°F (220°C) until hot and caramelized.


The Vermouth saffron glaze keeps for 3 days. Toasted pistachios keep several days in an airtight container. Add ricotta salata only immediately before serving.
