The artichoke becomes the vessel, aromatic frame and part of the sauce. Delicate rabbit, Taggiasca olives and fermented lemon build a complete main course while leaving the vegetable visually and aromatically dominant.

Ingredients
For the Artichokes
4 large globe artichokes
2 lemons
3 tbsp extra virgin olive oil (45 ml)
Garlic, shallot, thyme and rosemary
1/2 cup dry white wine (120 ml)
2 cups vegetable stock (475 ml)
For the Rabbit Filling
12 oz boneless rabbit loin or leg (340 g)
1 tbsp extra virgin olive oil (15 ml)
Shallot and garlic
1/3 cup Taggiasca olives (50 g)
2 tbsp dry white wine (30 ml)
2 tbsp fresh breadcrumbs (15 g)
1 tbsp Parmigiano Reggiano (10 g)
Parsley, rosemary and lemon zest
For the Rosemary Jus
Artichoke trimmings
1/2 cup dry white wine (120 ml)
1 1/2 cups rabbit or chicken stock (355 ml)
1/2 cup artichoke liquid (120 ml)
Rosemary, balsamic vinegar and cold butter
For the Fermented Lemon Cream
2 tbsp finely chopped preserved lemon rind (20 g)
1/2 cup crème fraîche (120 g)
1 tbsp extra virgin olive oil (15 ml)
1 tsp lemon juice (5 ml)
Preparation
Braise Whole Artichokes
Remove choke while keeping artichokes whole. Braise upright with white wine, stock and herbs for 20 to 25 minutes until tender but structurally firm.
Make Rabbit Filling
Brown finely diced rabbit briefly with shallot, deglaze with wine and finish off heat with olives, breadcrumbs, Parmigiano, parsley, rosemary and lemon zest. Keep moist.
Stuff and Roast
Fill drained artichokes generously without compressing. Roast upright at 400°F (205°C) for 15 to 18 minutes with a little braising liquid, then raise to 450°F (230°C) to crisp top and edges.
Make Jus and Lemon Cream
Roast artichoke trimmings, add aromatics, wine, rabbit stock and artichoke liquid, reduce and finish with balsamic vinegar and butter. Mix preserved lemon with crème fraîche, olive oil and lemon juice.
Professional Technique
Rabbit is diced rather than ground so it behaves like a seasoning inside the vegetable. The final jus contains roasted artichoke trimmings, preventing the dish from becoming rabbit with an artichoke garnish.

Plating

Wine Pairing
Rosso di Montalcino DOC, with cherry fruit, acidity and savory herbs, gives enough red wine structure for rabbit without overwhelming artichoke. Serve at 57°F to 61°F (14°C to 16°C).
Storage & Reheating
Braise artichokes and prepare jus up to a day ahead. Prepare rabbit filling earlier the same day. Stuff and roast close to service.
