Finocchi brasati is a simple Italian vegetable preparation in which fennel is gently browned, then cooked with a small amount of stock until tender and glossy. The fennel should keep its shape while becoming sweet, silky, and aromatic.

Ingredients

3 large fennel bulbs 2 tbsp extra virgin olive oil 1 tbsp unsalted butter 1/2 tsp kosher salt 1/4 tsp black pepper 1/2 cup low sodium vegetable or chicken stock 1/4 cup dry white wine 1 tsp fresh lemon juice 2 tbsp finely chopped fennel fronds 2 tbsp grated Parmigiano Reggiano, optional

Preparation

1. Trim fennel bulbs, reserving fronds. Cut each bulb through the root into 6 wedges so the core holds the layers together. 2. Heat olive oil and butter in a wide skillet over medium heat. Add fennel in one layer and season lightly. Brown 4 to 5 minutes per cut side. 3. Add white wine and reduce by half. Add stock, lower heat, cover, and simmer 15 minutes. 4. Uncover and cook 5 to 8 minutes more, turning once, until tender and the liquid reduces to a glossy coating. 5. Finish with lemon juice, fennel fronds, black pepper, and Parmigiano if using.

Cut through the root so the wedges remain intact. Browning before braising develops sweetness, while a shallow amount of liquid prevents the fennel from becoming waterlogged. Reduce the final liquid until it coats rather than pools.

Choose firm, heavy fennel bulbs with fresh green fronds. Do not discard the fronds; they provide the freshest fennel aroma at the end. A wide pan is better than a deep pot because it allows evaporation and browning.

Common Mistakes

Do not cut away the entire core before cooking, overcrowd the pan, or boil the fennel in too much stock. Avoid overcooking until the wedges collapse. Add lemon only at the end so the acidity stays bright.

Verdicchio pairs naturally with fennel and herbs. Vermentino adds citrus freshness. Soave Classico complements the vegetable sweetness. Gavi offers clean acidity. Frascati Superiore is a light Roman style option that keeps the pairing delicate.

Storage and Reheating

Refrigerate up to 3 days. Reheat gently in a covered skillet with 1 to 2 tbsp stock, then uncover briefly to restore the glaze. Do not freeze because the texture becomes watery.
