Ingredients
For the Pastry
2 cups all-purpose flour
½ cup granulated sugar

2 large egg yolks

2 tbsp Marsala
1 tbsp honey

For the Cocoa Almond Crumble
½ cup almond flour
2 tbsp all-purpose flour
2 tbsp cocoa powder
3 tbsp granulated sugar
3 tbsp unsalted butter
Pinch of salt
For the Blood Orange Sauce
¾ cup fresh blood orange juice
2 tbsp granulated sugar
1 tbsp fresh lemon juice
1 tsp cornstarch
1 tbsp unsalted butter
For Finishing
Toasted almonds
Dark chocolate shards
Fresh orange zest
Cocoa powder, very lightly
Preparation
1. Prepare the Pastry
Combine flour, sugar, salt, and lemon zest. Add the cold butter and work it into the flour until the mixture resembles coarse crumbs. Add the egg, egg yolks, and vanilla. Mix only until the dough comes together. Shape into a disk, wrap, and refrigerate for 1 hour.
2. Prepare the Filling
Cook the finely minced beef in a dry skillet over medium heat until fully cooked and very lightly browned. Drain any excess fat and cool completely. Combine the cooled beef with dark chocolate, almonds, sugar, candied orange peel, cocoa, cinnamon, cloves, Marsala, honey, and orange zest. Mix thoroughly. The filling should be dense, aromatic, and slightly moist without becoming loose.
3. Prepare the Cocoa Almond Crumble
Preheat the oven to 350°F. Combine almond flour, all-purpose flour, cocoa powder, sugar, butter, and salt. Rub together until irregular crumbs form. Bake for 9–11 minutes. Cool completely.
4. Prepare the Blood Orange Sauce
Combine blood orange juice, sugar, lemon juice, and cornstarch in a saucepan. Cook over medium heat until lightly thickened. Remove from the heat and whisk in the butter. Cool to room temperature.
5. Shape and Bake the Pastries
Roll the chilled pastry to approximately ⅛ inch thick. Cut eight circles about 4 inches in diameter. Place a compact spoonful of filling in the center of four circles. Traditionally, the pastries are enclosed, but for this plated version bake the filling-topped bases and the remaining pastry disks separately. Bake at 350°F for 14–16 minutes, until lightly golden. Cool completely.
Open Raviolo Style Plating
Place the filled pastry base near the center of the plate. Set the second pastry disk vertically or at a sharper angle rather than laying it flat, creating more height than in the previous desserts. Add a small quenelle or compact mound of the Modica filling beside the pastry to make the interior flavor visible. Spoon the blood orange sauce in a short, controlled arc instead of individual dots. Add cocoa almond crumble in a small irregular cluster and finish with one or two thin dark chocolate shards, toasted almonds, and fresh orange zest. Keep the plate sparse and sculptural, with a stronger vertical composition.
Professional Technique
The beef must be extremely lean and finely minced. Its role is not to make the dessert taste savory but to provide depth, richness, and texture beneath the chocolate and spices. Cool it completely before mixing with chocolate so the chocolate does not melt prematurely. The filling should remain textured rather than becoming a paste. Modica-style chocolate works especially well because its grainier texture and intense cocoa profile suit the historic character of the pastry.
