Ingredients
2 cups whole milk (16.23 fl oz)
5 large egg yolks
1/2 cup granulated sugar (3.53 oz)

Choosing the Pistachios
The quality of the pistachio determines the entire recipe.
Whenever possible, use an excellent Italian pistachio paste made from 100% pistachios.
For a Sicilian character, pistachios from the area around Bronte are particularly prized for their aroma and intensity.
The paste should contain pistachios and little else.
Avoid products containing large quantities of sugar, vegetable oil, milk powder, artificial pistachio flavor, or green coloring.
