Insalata di Polpo e Patate alla Ligure (Ligurian Octopus & Potato Salad)

Story of the Dish

Insalata di Polpo e Patate alla Ligure (Ligurian Octopus & Potato Salad)

Region: Liguria

Servings: 4

Prep Time: 30 minutes

Cook Time: 50 minutes

Chilling Time: 30 minutes

Along the rugged coastline of Liguria, seafood has always been at the heart of everyday cooking. Fishermen returning to ports such as Camogli, Sestri Levante, Portovenere, and the Cinque Terre often prepared simple salads using the day's catch, local potatoes, fragrant herbs, and the region's celebrated extra virgin olive oil.

Unlike heavier seafood dishes found elsewhere in Italy, Ligurian cuisine emphasizes freshness and balance. In this version, tender octopus is paired with creamy potatoes, crisp green beans, sweet cherry tomatoes, and the unmistakable flavor of Taggiasca olives, one of Liguria's most prized products. A bright basil and lemon vinaigrette ties everything together without overpowering the delicate seafood.

Served slightly warm or at room temperature, this elegant salad perfectly reflects the light, healthy character of the Ligurian Riviera and is equally suited as an appetizer or a refined main course.

Difficulty: Intermediate

Total Time: About 50 minutes

Ingredients

For the Octopus

2½ lb whole octopus, cleaned

1 lemon, halved

2 bay leaves

1 celery stalk

1 small onion, halved

8 black peppercorns

For the Salad

1½ lb Yukon Gold potatoes

8 oz fresh green beans, trimmed

1 cup cherry tomatoes, halved

¾ cup Taggiasca olives (or Kalamata), pitted

2 tbsp capers, rinsed

2 tbsp toasted pine nuts

¼ cup fresh basil leaves

2 tbsp chopped Italian parsley

Lemon Basil Vinaigrette

⅓ cup Ligurian extra virgin olive oil

2 tbsp fresh lemon juice

1 tsp Dijon mustard

1 small garlic clove, grated

1 tsp lemon zest

Sea salt

Freshly ground black pepper

Preparation

Step 1 – Cook the Octopus

Fill a large pot with water.

Add:

lemon halves

celery

onion

bay leaves

peppercorns

Bring to a gentle simmer.

Holding the octopus by the head, dip the tentacles into the water three or four times to help them curl naturally.

Submerge completely.

Cook over low heat for 40–50 minutes, depending on size.

The octopus is ready when a knife slides easily into the thickest tentacle.

Remove and allow to cool in its own cooking liquid for about 20 minutes to retain moisture.

Cut into bite-sized pieces.

Step 2 – Cook the Potatoes

Place potatoes in salted cold water.

Bring to a boil.

Cook about 20 minutes, or until tender but still firm.

Drain.

Allow to cool slightly.

Peel and cut into rustic chunks.

Step 3 – Blanch the Green Beans

Bring salted water to a boil.

Cook green beans for 3 minutes.

Immediately transfer to ice water.

Drain thoroughly.

Step 4 – Prepare the Dressing

Whisk together:

olive oil

lemon juice

Dijon mustard

garlic

lemon zest

salt

pepper

Taste and adjust seasoning.

Step 5 – Assemble

In a large bowl combine:

octopus

potatoes

green beans

cherry tomatoes

Taggiasca olives

capers

pine nuts

Pour over the vinaigrette.

Fold gently to avoid breaking the potatoes.

Step 6 – Finish

Add:

fresh basil

chopped parsley

Allow the salad to rest for 20–30 minutes before serving so the flavors meld together.

Finish with one final drizzle of premium Ligurian extra virgin olive oil.

Professional Technique

Verdicchio dei Castelli di Jesi

Fresh acidity and savory structure keep the pairing balanced.

Vermentino di Gallura

Citrus, herbs, and salinity complement many Italian preparations.

Etna Bianco

Minerality and tension support complex flavors without heaviness.

Ligurian character comes from excellent olive oil, parsley, lemon, and restraint. The salad should not swim in dressing. Fold rather than stir, and let it rest briefly before service so the potatoes absorb flavor while the octopus remains distinct.

Chef Tips

Cooling the octopus in its cooking liquid keeps it exceptionally tender.

Yukon Gold potatoes absorb the vinaigrette beautifully without falling apart.

Taggiasca olives provide a buttery, delicate flavor that is characteristic of Liguria.

Toast the pine nuts lightly for extra aroma and texture.

Serve slightly warm or at room temperature—never refrigerator cold, as the olive oil loses its fragrance.

Keep the preparation focused on the principal ingredient in Insalata di Polpo e Patate alla Ligure (Ligurian Octopus & Potato Salad). Taste before final seasoning, control heat carefully, and adjust consistency with cooking liquid or stock rather than unnecessary cream. Prepare garnish and serving plates before the final cooking stage so the dish can be served at its best texture and temperature.

For a Michelin-style presentation, use a ring mold to stack the potatoes in the center of a chilled white plate. Arrange slices of octopus naturally over the top, scatter the green beans and Taggiasca olives with precision, and finish with micro basil, edible flowers, toasted pine nuts, and a few drops of vibrant basil oil. A final drizzle of premium Ligurian extra virgin olive oil just before serving adds shine, aroma, and elegance worthy of a fine-dining restaurant.

— Chef Gianluca

For the best result, prioritize ingredient quality and execute the basic technique cleanly before adding decorative touches. The finished recipe should taste balanced first; presentation comes second. Make the final adjustment for salt, acidity, sweetness, or texture immediately before service, then serve without unnecessary delay.

Mistakes to Avoid

Do not overcrowd the pan or mixing bowl.

Do not add unnecessary garnish that changes the identity of the dish.

Do not overcook the principal ingredient or allow the finished dish to sit too long before serving.

Storage and Reheating

Cool leftovers promptly and refrigerate in an airtight container for up to 3 days. Reheat gently with a small amount of stock, water, or sauce as appropriate. Avoid repeated reheating because it damages texture and can dry proteins or overcook starches.

Store leftovers in an airtight container in the refrigerator within 2 hours and use within 3 days when appropriate for the ingredients.

Reheat gently only when the dish is intended to be served warm; delicate salads, raw seafood, and frozen desserts should not be reheated.
