Story of the Liqueur
Italian Orange Liqueur is a traditional homemade digestif enjoyed throughout Southern Italy, especially in Sicily, Calabria, and Campania, where fragrant citrus fruits have been cultivated for centuries. While limoncello is the most famous citrus liqueur, orange liqueur offers a richer, sweeter, and more aromatic profile thanks to the natural essential oils found in the orange peel.
This liqueur is made by slowly infusing fresh orange zest in high-proof alcohol before blending it with a simple syrup. The result is a smooth, vibrant spirit that can be enjoyed chilled after dinner, mixed into cocktails, or used to flavor cakes, pastries, gelato, and desserts.
Yield: About 2 litersPreparation Time: 30 minutesInfusion Time: 15 daysResting Time: 30 days
Ingredients
10 large organic oranges
4¼ cups (1 liter) 95% grain alcohol
5 cups (1.2 liters) water
3½ cups (700 g) granulated sugar
Preparation
Step 1 – Prepare the Oranges
Wash the oranges thoroughly under cold running water and dry them completely.
Using a vegetable peeler, remove only the bright orange outer peel. Avoid the white pith underneath, as it contains bitter compounds that can negatively affect the flavor of the finished liqueur.
Step 2 – Infuse the Alcohol
Place the orange peels into a large glass jar with an airtight lid.
Pour the grain alcohol over the peels until they are completely submerged.
Seal the jar tightly and store it in a cool, dark place for 15 days.
Shake the jar gently once each day to help extract the essential oils from the peels.
Step 3 – Prepare the Syrup
After the infusion is complete, combine the water and sugar in a saucepan.
Bring to a gentle simmer, stirring until the sugar has completely dissolved.
Do not boil excessively.
Allow the syrup to cool completely to room temperature.
Step 4 – Filter
Strain the infused alcohol through a fine-mesh sieve or cheesecloth, removing all of the orange peels.
Slowly pour the cooled syrup into the orange-infused alcohol while stirring continuously.
Mix well until fully combined.
Step 5 – Bottle and Age
Pour the finished liqueur into sterilized glass bottles.
Seal tightly and allow the bottles to rest for at least 30 days before serving.
For the smoothest and most balanced flavor, allow the liqueur to mature for 60–90 days.
Serving Suggestions
Serve well chilled directly from the refrigerator or freezer.
Italian Orange Liqueur is excellent:
As an after-dinner digestif
Over ice
In sparkling wine or Prosecco
In classic cocktails
Over vanilla gelato
In cakes and pastry fillings
Storage
Store the bottles in a cool, dark place for up to 2 years.
Because of its alcohol content, the liqueur can also be stored in the freezer, where it will become beautifully thick and silky without freezing solid.
Chef's Tips
Always use organic, unwaxed oranges since only the peel is used.
Removing only the colored zest is the secret to producing a smooth, elegant liqueur.
Allowing the liqueur to rest for several months dramatically improves its aroma and texture.
For an even clearer liqueur, filter it a second time through a coffee filter before bottling.
A small vanilla bean or one cinnamon stick may be added during the infusion for a unique variation.
