Open Ravioli with Lobster, Saffron Bisque, Lemon Butter and Crispy Leeks
Story of the Dish
This open ravioli is built around one principle: every part of the lobster must be used.
The tail and claw meat remain the centerpiece, while the shells are roasted and transformed into a deep, concentrated bisque. Saffron adds warmth and elegance without overpowering the natural sweetness of the lobster.
Instead of enclosing the filling inside a traditional raviolo, the pasta sheets are layered directly on the plate. This allows every element to remain visible and gives the dish a refined restaurant-style presentation.
A light lemon butter sauce brings acidity, while crispy leeks add texture and a subtle sweetness. The final result is rich, aromatic and luxurious without becoming heavy.

Serves 4 as an appetizer or refined first course.
Ingredients
For the Fresh Pasta
2 cups Italian “00” flour
3 large eggs
1 large egg yolk
1 teaspoon extra-virgin olive oil
Pinch of fine sea salt
Semolina flour, for dusting
For the Lobster
2 live lobsters, about 1¼ pounds each
2 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
1 garlic clove, lightly crushed
2 fresh thyme sprigs
¼ teaspoon fine sea salt
Freshly ground black pepper
For the Saffron Lobster Bisque
Lobster shells and heads
2 tablespoons extra-virgin olive oil
1 small onion, roughly chopped
1 small carrot, roughly chopped
1 celery stalk, roughly chopped
2 garlic cloves, crushed
2 tablespoons tomato paste
½ cup dry white wine
2 tablespoons brandy
4 cups cold water
1 bay leaf
3 fresh thyme sprigs
10 black peppercorns
1 generous pinch saffron threads
½ cup heavy cream
2 tablespoons cold unsalted butter
Fine sea salt, as needed
For the Lemon Butter Sauce
4 tablespoons unsalted butter
¼ cup reserved lobster cooking liquid or light fish stock
1 tablespoon fresh lemon juice
1 teaspoon finely grated lemon zest
1 tablespoon finely chopped chives
Fine sea salt, as needed
For the Crispy Leeks
1 small leek, white part only
½ cup neutral frying oil
Fine sea salt
For Finishing
Fresh chives
Small basil leaves or microgreens
Extra-virgin olive oil
Freshly grated lemon zest
Optional: salmon roe or caviar
Preparation
Prepare the Pasta Dough
Place the flour on a clean work surface and form a wide well in the center.
Add the eggs, egg yolk, olive oil and salt. Using a fork, gradually incorporate the flour from the inside edge of the well until a rough dough begins to form.
Knead the dough firmly for 8 to 10 minutes, until smooth, elastic and no longer sticky. The dough should feel firm but pliable.
Wrap tightly in plastic wrap and allow it to rest at room temperature for at least 30 minutes. Resting relaxes the gluten and makes the dough easier to roll.
Cook the Lobsters
Bring a large pot of heavily salted water to a boil.
Place the lobsters in the water and cook for approximately 6 minutes. The lobster should remain slightly undercooked because the meat will be finished later in butter.
Transfer immediately to a bowl of ice water to stop the cooking.
Remove the tail and claw meat carefully, keeping the pieces as intact as possible. Reserve all shells, heads and any juices for the bisque.
Cut the tail meat into thick medallions. Leave the claw meat whole or cut it into large pieces.
Refrigerate until needed.
Roast the Lobster Shells
Break the lobster shells into smaller pieces.
Heat the olive oil in a wide saucepan over medium-high heat. Add the shells and cook for 8 to 10 minutes, stirring frequently and pressing them against the pan.
The shells should become deeply red and aromatic. This roasting step is essential because it develops the foundation of the bisque.
Add the onion, carrot, celery and garlic. Cook for another 5 minutes, allowing the vegetables to soften and lightly caramelize.
Add the tomato paste and cook for 2 to 3 minutes, stirring continuously, until the paste darkens slightly.
Deglaze and Build the Bisque
Remove the pan briefly from the flame and add the brandy.
Return to the heat and allow the alcohol to reduce almost completely.
Add the white wine and scrape the bottom of the pan to release all the caramelized flavor. Reduce the wine by approximately two-thirds.
Add the cold water, bay leaf, thyme and peppercorns. Bring to a gentle simmer.
Cook uncovered for approximately 35 to 40 minutes. Do not boil aggressively, or the bisque may become bitter and cloudy.
During cooking, continue crushing the shells gently with a wooden spoon to extract as much flavor as possible.
Strain the liquid through a fine-mesh strainer, pressing firmly on the shells and vegetables.
Discard the solids.
Reduce the Bisque
Return the strained lobster liquid to a clean saucepan.
Add the saffron and reduce gently until approximately 1½ cups remain.
Add the heavy cream and simmer for another 5 to 7 minutes, until the bisque lightly coats the back of a spoon.
Remove from the heat and whisk in the cold butter one tablespoon at a time. This creates a glossy, smooth texture.
Taste and adjust the seasoning with salt.
Keep the bisque warm without boiling.
Prepare the Crispy Leeks
Cut the leek into very thin strips.
Rinse thoroughly under cold water and dry completely with paper towels.
Heat the neutral oil in a small saucepan over medium heat.
Fry the leek strips in small batches until lightly golden and crisp. This should take approximately 30 to 45 seconds.
Remove with a slotted spoon and drain on paper towels.
Season immediately with a small pinch of salt.
Roll and Cut the Pasta
Divide the rested pasta dough into four portions.
Flatten one portion and pass it through a pasta machine on the widest setting. Fold it into thirds and pass it through again.
Repeat this process three or four times to strengthen the structure.
Continue passing the dough through progressively thinner settings until the pasta is thin enough to see the outline of your hand through it.
Cut the sheets into 4-inch squares. You will need three squares for each serving.
Dust lightly with semolina and cover with a clean kitchen towel.
Prepare the Lemon Butter Sauce
Place the butter and lobster cooking liquid in a small saucepan over medium-low heat.
Whisk continuously until the butter melts and the sauce begins to emulsify.
Add the lemon juice and zest.
Remove from the heat and stir in the chives.
Season lightly with salt.
The sauce should remain glossy and fluid. Do not allow it to separate.
Finish the Lobster
Heat the butter and olive oil in a sauté pan over medium-low heat.
Add the crushed garlic and thyme.
Add the lobster meat and warm gently for approximately 1 to 2 minutes, spooning the butter over the meat.
Do not overcook the lobster. It should remain tender, moist and naturally sweet.
Season lightly with salt and pepper.
Remove the garlic and thyme before plating.
Cook the Pasta
Bring a large pot of salted water to a gentle boil.
Cook the pasta squares in small batches for approximately 60 to 90 seconds.
Transfer them carefully into the lemon butter sauce.
Gently coat each sheet in the sauce. Do not stir aggressively because the pasta is delicate and can tear.
Chef Tips
Do not overcook the lobster during the first boiling stage. It should remain slightly underdone so it can finish gently in the aromatic butter.
Roast the shells thoroughly before adding the liquid. Pale shells produce a weak bisque, while properly caramelized shells create deeper flavor and color.
Always add saffron during the reduction stage rather than at the beginning. Long cooking can flatten its aroma and produce bitterness.
The bisque should be intense but fluid. This is a sauce for pasta, not a thick soup.
Warm the serving plates before plating. Open ravioli cools quickly because the pasta sheets are exposed.
The final plate should show balance: sweet lobster, concentrated bisque, fresh lemon acidity and crisp leek texture.
Serving and Presentation
Spoon a small amount of saffron lobster bisque into the center of each warm plate.
Place one pasta square over the bisque.
Arrange a few pieces of lobster on top.
Add a second pasta square, slightly rotated so the corners remain visible.
Add more lobster meat and a spoonful of bisque.
Finish with the final pasta square.
Spoon additional bisque around the raviolo and drizzle the lemon butter sauce lightly over the top.
Garnish with crispy leeks, fresh chives, microgreens and a small amount of grated lemon zest.
Finish with a few drops of high-quality extra-virgin olive oil.
For an even more luxurious version, add a small spoonful of salmon roe or caviar on top.
Wine Pairing
Pair this dish with a chilled Vermentino di Gallura from Sardinia.
Its citrus notes, minerality and natural salinity complement the lobster and saffron while cutting through the richness of the butter and cream.
A high-quality Franciacorta Brut is another excellent choice, especially when the dish is served as part of a tasting menu.
