Few ingredients communicate luxury like lobster and caviar. This raviolo was designed to celebrate both without excess. The lobster is gently poached in butter to preserve its delicate sweetness, then folded into creamy stracciatella that melts inside the pasta.
The saffron pasta adds floral aromas and a beautiful golden color, while the Champagne beurre blanc brings acidity and richness. Small pearls of lemon caviar burst in the mouth, refreshing every bite and balancing the creamy filling.
The result is an elegant, refined raviolo worthy of a tasting menu in a Michelin-starred restaurant.

Ingredients
Serves 4 (20–24 Ravioli)
Fresh Saffron Pasta
14.11 oz Italian "00" flour
4 large eggs
1 egg yolk
½ tsp premium saffron threads, infused
Pinch of sea salt
Filling
2 live lobsters (about 21.16 oz each)
8.82 oz stracciatella di burrata
1.41 oz mascarpone
1.41 oz Parmigiano Reggiano DOP (24 months)
Zest of ½ Amalfi lemon
Fresh chives

2 shallots, finely minced
6.76 fl oz Champagne
4.06 fl oz white wine
4.06 fl oz fish fumet
8.82 oz cold unsalted butter, diced

Preparation
The Pasta
Infuse the saffron threads in one tablespoon of warm water for 20 minutes.
Mix the flour with the eggs, egg yolk and saffron infusion.
Knead for approximately 15 minutes until smooth, silky and elastic.
Wrap and rest for one hour.
The dough should have a natural golden color and a delicate saffron aroma.
Preparing the Lobster
Bring heavily salted water to a gentle boil.
Cook the lobsters for approximately 5 minutes.
Immediately transfer them into ice water.
Remove all the meat from the claws, knuckles and tail.
Cut into small cubes.
Warm gently in butter for about one minute.
Allow to cool completely.
The Filling
Combine:
Stracciatella
Mascarpone
Parmigiano
Lemon zest
Chopped chives
Fold in the lobster meat at the end.
Season lightly with white pepper and a pinch of sea salt.
Refrigerate for 30 minutes.
The filling should remain light and creamy while preserving visible chunks of lobster.
Champagne Beurre Blanc
Cook the shallots with the Champagne, white wine and fish fumet.
Reduce until approximately 2.71 fl oz remain.
Lower the heat completely.
Whisk in the cold butter one cube at a time.
Never allow the sauce to boil.
Strain through a fine chinois.
The beurre blanc should be smooth, glossy and velvety.
Forming the Ravioli
Roll the saffron pasta to approximately 0.8 mm.
Pipe 0.71 oz of filling.
Brush lightly with water.
Seal carefully.
Cut into large round ravioli.
Allow to rest on semolina for 20 minutes.
Cooking
Cook the ravioli in gently boiling salted water for approximately 3 minutes.
Transfer directly into the beurre blanc with a spoonful of pasta water.
Finish cooking for 30 seconds, coating the ravioli gently.
Professional Technique
Salt the cooking water correctly, reserve starchy pasta water, and finish the pasta in the sauce whenever the recipe allows. Fresh pasta requires gentler handling and much shorter cooking than dried pasta. The sauce should coat the pasta rather than pool beneath it, and final seasoning should be adjusted only after cheese, cured meat, or other salty components are incorporated.
Chef Tips
Slightly undercook the lobster before mixing it into the filling; it will finish cooking inside the raviolo.
Never let beurre blanc boil after incorporating the butter or it will separate.

This raviolo works only if every rich element is kept under control. Lobster is naturally sweet, stracciatella is creamy, caviar is saline, and beurre blanc is buttery, so the saffron pasta must remain thin and the filling must be measured rather than packed heavily. The goal is not excess luxury but a clear sequence of flavors in which lobster remains the center of the dish.
For the lobster, poach or steam only until just cooked, then chill briefly before chopping. Overcooked lobster becomes fibrous and loses the delicate sweetness needed here. Mix the filling gently so the stracciatella binds the lobster without turning it into a paste. Keep the mixture cold until the ravioli are formed.
The Champagne beurre blanc must be reduced properly before butter is incorporated. Reduce the wine and aromatics until the acidity is concentrated, then lower the heat and whisk in cold butter gradually. The sauce should be glossy and fluid, never greasy. Add lemon caviar only at the end so its acidity remains bright.
Cook the ravioli in generously salted water at a gentle boil. Transfer them directly into a wide pan with a spoonful of beurre blanc and a splash of pasta water, then finish the cooking in the pan for the final minute. This protects the filling, coats the pasta evenly, and gives the sauce a more natural emulsion.
