Zabaione senza alcol is a delicate interpretation of traditional Italian zabaglione designed for those who want its characteristic warm, airy texture without Marsala or any other alcoholic wine.

Traditional zabaione relies on three principal ingredients: egg yolks, sugar, and wine. Removing the wine means that the liquid component must be carefully replaced while preserving the balance between flavor, moisture, temperature, and structure.

In this version, whole milk provides body and softness, while vanilla and fresh orange or lemon zest introduce the aromatic complexity normally contributed by Marsala.

The finished cream should be warm, silky, light, and aerated, with enough structure to fall from the whisk in a thick ribbon.

Ingredients

6 large egg yolks

1/2 cup granulated sugar (3.53 oz)

1/3 cup whole milk (2.71 fl oz)

1 teaspoon pure vanilla extract

Finely grated zest of 1/2 untreated orange

Finely grated zest of 1/2 untreated lemon, optional

Pinch of fine sea salt

Why Milk Replaces the Marsala

Marsala performs several functions in traditional zabaione.

It provides liquid, acidity, sweetness, alcohol, and considerable aromatic complexity.

Simply removing it without replacing part of its volume would create an excessively dense egg cream.

Whole milk provides enough liquid to allow the yolks to expand and become creamy while maintaining a soft dairy character.

The citrus zest and vanilla compensate for some of the aromatic complexity lost when the Marsala is removed.

Preparation

Prepare the Bain Marie

Pour approximately 1 to 2 inches of water into a saucepan.

Bring the water to a gentle simmer.

Choose a heatproof bowl that sits securely over the saucepan.

The bottom of the bowl must not touch the water.

The cream should be heated by steam rather than direct contact with boiling water.

This gentle heat is essential for controlling the coagulation of the egg yolks.

Prepare the Egg Yolks

Place the egg yolks and granulated sugar in the heatproof bowl.

Whisk immediately.

Continue whisking until the mixture becomes pale, thick, and noticeably increased in volume.

When lifted, the whisk should leave a visible ribbon across the surface.

Add the pinch of fine sea salt.

Add the Milk

Slowly pour the milk into the yolk mixture while whisking continuously.

Do not add all the liquid at once.

Gradual incorporation helps maintain a smooth emulsion.

Add the vanilla.

Add the finely grated orange zest.

If you prefer a brighter citrus character, add a small quantity of lemon zest as well.

Cook the Zabaione

Place the bowl over the gently simmering water.

Whisk continuously.

Use broad movements to incorporate air while regularly reaching the bottom and sides of the bowl.

The mixture will initially become slightly thinner.

As its temperature rises, the egg yolks will begin thickening and the incorporated air will increase its volume.

Continue whisking steadily.

Do not increase the heat in an attempt to accelerate the process.

Professional Temperature

Monitor the temperature with an instant read thermometer whenever possible.

Bring the mixture gradually to approximately 160°F to 165°F (160°F to 165°F).

At this point, the egg yolks should be sufficiently cooked and the cream should have developed considerable structure.

Avoid allowing the temperature to rise unnecessarily.

The difference between silky zabaione and scrambled egg can be only a few degrees when the mixture becomes excessively hot.

How to Recognize the Correct Texture

Lift the whisk.

The cream should fall back into the bowl in a thick ribbon.

The ribbon should remain visible on the surface for several seconds before gradually disappearing.

The zabaione should appear significantly increased in volume.

The surface should contain extremely fine bubbles rather than large unstable bubbles.

The underlying texture should remain creamy.

Remove from the Heat

Immediately remove the bowl from the bain marie.

Continue whisking for approximately 30 to 60 seconds.

This prevents the residual heat retained by the bowl from continuing to cook the egg yolks.

Taste and adjust the citrus aroma if necessary with a very small amount of freshly grated zest.

Serve Warm

Zabaione senza alcol is particularly enjoyable when served immediately.

Spoon it into warm or room temperature dessert glasses.

Cold Version

The cream can also be served cold.

Once completely cold, cover and refrigerate.

Alcohol Free Zabaione Cream

For a lighter pastry filling, prepare the zabaione and cool it completely.

Whip 1 cup heavy whipping cream (8.12 fl oz) to soft peaks.

Whisk the cold zabaione briefly until smooth.

Fold approximately one quarter of the whipped cream into the zabaione to lighten it.

Then gently fold in the remaining cream.

This creates an exceptionally light filling suitable for cakes, tartlets, individual desserts, and layered pastries.

Orange Variation

Use orange zest as the principal aromatic ingredient.

Orange works particularly well with:

Dark chocolate

Almonds

Pistachios

Ricotta

Vanilla

Lemon Variation

Replace the orange zest with fresh untreated lemon zest.

The result is brighter and slightly more refreshing.

Use only the yellow portion of the peel.

Whisk gently until completely melted and emulsified.

The resulting cream will become slightly denser as it cools because of the cocoa butter.

The eggs scramble: The heat was excessive or the mixture became too hot.

The cream remains liquid: It was removed from the heat too early.

The cream contains large bubbles: The whisking technique incorporated air without developing enough structure.

The cream collapses rapidly: The yolks were insufficiently cooked or the foam was poorly developed.

The cream tastes excessively sweet: Too much sugar overwhelms the delicate vanilla and citrus aromas.

The cream tastes strongly of egg: Insufficient aromatic ingredients were used or the yolks were overheated.

Chef’s Technical Note

Removing Marsala does not mean simply removing an ingredient.

Every ingredient in a classical preparation performs a function.

Once the wine disappears, we must replace enough liquid to maintain the correct relationship between egg yolks, sugar, and moisture.

Milk provides that balance without dominating the flavor.

Vanilla and citrus then provide aromatic complexity.

The second essential element is temperature.

Use the thermometer.

There is no advantage in guessing when dealing with an egg foam whose final texture depends directly on controlled protein coagulation.

Slow heat and constant whisking produce small stable air bubbles and a silky texture.

Excessive heat produces scrambled eggs.
