These bottoni are built around three controlled contrasts: saffron in the pasta, sheep’s milk ricotta in the center, and smoked butter as the aromatic finishing element. Pistachio provides texture and roasted bitterness without becoming the dominant flavor. The filling stays clean and almost pure so the saffron and ricotta remain the two central ingredients.

Ingredients

For the saffron pasta

  • 1 3/4 cups Italian 00 flour (220 g)

  • 1/4 cup fine semolina flour (35 g)

  • 2 large eggs

  • 3 large egg yolks

  • 1 generous pinch saffron threads, about 1/8 tsp (0.15 g)

  • 1 tbsp hot water (15 ml)

  • 1 tsp extra virgin olive oil (5 ml)

  • 1/4 tsp fine sea salt (1.5 g)

For the ricotta filling

  • 14 oz fresh sheep’s milk ricotta (400 g)

  • 1 1/2 oz Parmigiano Reggiano, finely grated (40 g)

  • 1 large egg yolk

  • 1 tsp finely grated lemon zest

  • 1/4 tsp freshly ground white pepper

  • Fine sea salt

For smoked butter and pistachio

  • 5 tbsp unsalted butter (70 g)

  • 1 small piece culinary safe hardwood charcoal

  • 1 tsp extra virgin olive oil (5 ml)

  • 2 oz unsalted pistachios (55 g)

  • Fine sea salt

For finishing

  • 1/3 cup light vegetable stock or pasta water (80 ml)

  • 1 oz Parmigiano Reggiano (28 g)

  • 1 tsp fresh lemon juice (5 ml)

  • Fresh chives

  • A few saffron threads

  • Freshly ground black pepper

  • Extra virgin olive oil


Preparation

  1. Bloom saffron in hot water for 20 minutes, then cool slightly.

  2. Knead the flour, semolina, eggs, yolks, saffron infusion, olive oil and salt for about 10 minutes. Rest 30 minutes, then roll to 1/32 inch (0.8 mm).

  3. Drain and sieve the ricotta. Mix gently with Parmigiano, egg yolk, lemon zest, white pepper and salt, then transfer to a piping bag.

  4. Melt the butter without browning. Smoke it very briefly using culinary hardwood charcoal in a covered heatproof container. Taste after 3 to 4 minutes and repeat only if the smoke remains subtle.

  5. Toast pistachios at 325°F (165°C) for 7 to 8 minutes. Keep some whole and crush the rest coarsely with olive oil and salt.

  6. Pipe ricotta mounds onto one pasta sheet, moisten the surrounding pasta, cover with a second sheet, eliminate trapped air and cut 2 inch (5 cm) round bottoni.

  7. Cook bottoni 2 to 3 minutes in gently boiling salted water. Emulsify smoked butter with stock or pasta water, glaze the bottoni briefly, then finish off heat with Parmigiano and lemon juice.

  8. Arrange five or six bottoni per plate, spoon a thin layer of smoked butter emulsion around them, scatter pistachio and finish with chives, black pepper and saffron threads.


Professional Technique

The entire dish depends on controlling aroma. Saffron should dominate the first impression, ricotta the center of the bite, smoke the finish, and pistachio the texture. Smoked butter is used instead of brown butter so hazelnut notes do not compete with both saffron and pistachio.


Chef Tips

  • Use sheep’s milk ricotta and drain it thoroughly.

  • Keep pasta slightly thicker than paper thin so it can hold a generous filling.

  • Taste smoked butter before repeating the smoking cycle.

  • Toast pistachios gently.

  • Finish Parmigiano off direct heat.

  • Cook bottoni in batches to protect their shape.

  • Over smoking the butter.

  • Using enough pistachio to turn the dish into a pesto.

  • Using wet ricotta.

  • Overworking the filling.

  • Boiling the butter emulsion.

  • Using excessive saffron.


Wine Pairing

Etna Bianco DOC, particularly Carricante driven examples, brings acidity, volcanic salinity and restrained citrus that works with saffron, ricotta and smoke. Serve at 48°F to 52°F (9°C to 11°C).


Storage & Reheating

The ricotta filling can be made 12 hours ahead and the pasta dough 24 hours ahead. Uncooked bottoni may be refrigerated for about 4 hours or frozen individually and cooked directly from frozen. Smoked butter keeps refrigerated for up to 3 days.
