Preparation
1. Roast the Garlic
Heat the oven to 375°F (190°C). Trim the top of the garlic head, drizzle with olive oil, wrap and roast 40 to 50 minutes until tender and golden, not dark brown.
2. Concentrate
Cool completely, squeeze out the cloves and work them into a smooth paste. If watery, cook over very low heat for 1 to 2 minutes, then cool again.
3. Prepare the Parsley
Dry the parsley meticulously and chop with a sharp knife. Avoid turning it into a wet green paste.
4. Temper the Butter
Bring butter to 64°F to 68°F (18°C to 20°C). It should yield under a spatula but remain opaque.
5. Combine
Mix garlic, parsley, zest, pepper and optional thyme, then fold into butter in two additions. Season only after tasting.
6. Shape and Rest
Roll into a 1 1/2 inch (4 cm) cylinder and refrigerate at least 6 hours, preferably overnight.
