This savory flan is designed around ricotta and saffron as the two dominant ingredients. The ricotta is transformed into a delicate custard like structure, while saffron is infused directly into the dairy base. Roasted onion adds sweetness and bitterness, Parmigiano broth brings depth, and toasted almond provides a dry nutty finish.

Ingredients

For the saffron ricotta flan

  • 14 oz sheep’s milk ricotta (400 g)

  • 2 large eggs

  • 2 large egg yolks

  • 1/3 cup heavy cream (80 ml)

  • 1 1/2 oz Parmigiano Reggiano, finely grated (40 g)

  • 1 generous pinch saffron threads, about 1/8 tsp (0.15 g)

  • 2 tbsp hot cream (30 ml)

  • 1/4 tsp freshly grated nutmeg

  • Freshly ground white pepper

  • Fine sea salt

For the roasted onion

  • 2 medium yellow onions

  • 1 tbsp extra virgin olive oil (15 ml)

  • 1 tbsp unsalted butter (14 g)

  • 1 tsp aged balsamic vinegar (5 ml)

  • Fine sea salt

  • Freshly ground black pepper

For the Parmigiano broth

  • 6 oz Parmigiano Reggiano rinds (170 g)

  • 1 small shallot

  • 1 small celery stalk

  • 1 small thyme sprig

  • 4 cups water (950 ml)

  • 6 black peppercorns

For the almond and finishing

  • 2 oz peeled almonds (55 g)

  • 1 tsp extra virgin olive oil (5 ml)

  • Fine sea salt

  • Fresh chives

  • Young parsley leaves

  • A few saffron threads

  • Parmigiano Reggiano

  • Extra virgin olive oil

  • Freshly ground black pepper


Preparation

  1. Bloom saffron in 2 tbsp (30 ml) hot cream for at least 20 minutes.

  2. Drain and sieve ricotta. Combine with eggs, yolks, cream, Parmigiano, saffron infusion, nutmeg, white pepper and salt. Blend only briefly and pass through a fine sieve again.

  3. Butter four small ramekins, fill about three quarters full and tap gently to remove large air bubbles.

  4. Bake in a bain marie at 300°F (150°C) for 30 to 35 minutes, loosely covered, until the center retains a slight movement. Rest 10 minutes before unmolding.

  5. Roast Parmigiano rinds at 425°F (220°C) for about 15 minutes, then simmer gently with shallot, celery, thyme, peppercorns and water for about 40 minutes. Strain and reduce to about 2 cups (475 ml).

  6. Halve onions and char them cut side down in cast iron, then roast at 375°F (190°C) for about 20 minutes. Peel, separate into petals and glaze gently with butter, olive oil, balsamic, salt and pepper.

  7. Toast almonds at 325°F (165°C) for 8 to 10 minutes, cool and crush irregularly.

  8. Spoon hot Parmigiano broth into a warm shallow bowl, unmold the flan into the center, lean roasted onion petals against it and finish with almonds, chives, parsley, black pepper, a small amount of Parmigiano, saffron threads and olive oil.


Professional Technique

The texture depends on low temperature cooking. Ricotta contains less fat than heavy cream, so aggressive heat tightens the proteins and creates a grainy interior. A bain marie lets the flan set like a savory custard. Parmigiano broth stays outside the flan because mixing it into the custard would overpower saffron and ricotta.

Wine Pairing

Greco di Tufo DOCG offers acidity and mineral character that cut through ricotta and Parmigiano, while subtle bitter almond and herbal notes echo the roasted onion and almond garnish. Serve at 48°F to 52°F (9°C to 11°C).


Storage & Reheating

The flan mixture can be prepared several hours ahead and cooked flans refrigerated up to 24 hours. Reheat gently in a covered water bath at 275°F (135°C), never in a microwave. Parmigiano broth keeps up to 2 days and roasted onions up to 24 hours.
