Artichoke is treated as the center of the plate, not as a side vegetable. The heart is braised and deeply roasted, tender leaves become crisp, and the trimmings are transformed into a concentrated smoked artichoke jus. Pecorino Sardo adds richness while bottarga contributes marine depth without overwhelming the vegetable.

Ingredients
For the Artichokes
4 large globe artichokes
2 lemons
3 tbsp extra virgin olive oil (45 ml)
2 garlic cloves, lightly crushed
4 sprigs fresh thyme
1 small sprig rosemary
1 cup dry white wine (240 ml)
2 cups vegetable stock (475 ml)
1 tsp fine sea salt (5 g)
Freshly ground black pepper
For the Smoked Artichoke Jus
Artichoke stems, outer leaves and clean trimmings
1 tbsp extra virgin olive oil (15 ml)
1 small shallot, sliced
1 garlic clove
1 tbsp tomato paste (16 g)
1/2 cup dry white wine (120 ml)
2 1/2 cups vegetable stock (600 ml)
1 small sprig thyme
1 strip lemon peel
1 tsp unsalted butter (5 g)
For the Pecorino Sardo Cream
4 oz Pecorino Sardo (115 g)
3/4 cup heavy cream (180 ml)
1/4 cup whole milk (60 ml)
Freshly ground white pepper
To Finish
Reserved tender artichoke leaves
Neutral frying oil
1 1/2 oz bottarga di muggine (40 g)
Fresh mint leaves
Lemon zest
Extra virgin olive oil
Preparation
Clean the Artichokes
Remove tough leaves, trim tops, peel stems and remove the choke. Keep clean trimmings for the jus and hold artichokes in acidulated water.
Braise the Artichokes
Sear gently with garlic and herbs. Add white wine, reduce by half, add stock and simmer partially covered for 20 to 25 minutes until tender but intact.
Build the Smoked Artichoke Jus
Caramelize trimmings aggressively, add shallot, garlic and tomato paste, deglaze with wine, add stock, thyme and lemon peel, simmer and strain. Reduce, smoke very lightly and finish with butter.
Prepare the Pecorino Cream
Warm cream and milk without boiling. Whisk in Pecorino, season with white pepper and strain.
Roast and Crisp
Halve the braised artichokes, sear cut side down and finish in a 425°F (220°C) oven for 8 to 10 minutes. Fry tender leaves at 340°F (170°C) until crisp.
Professional Technique
The braise cooks dense fibers evenly; the second high heat stage creates Maillard browning and concentration. The jus follows classical reduction logic: caramelize, extract, strain and reduce. Bottarga is added only at service.
Chef Tips
Use very fresh, heavy artichokes with compact leaves.
Do not discard properly peeled stems.
Keep Pecorino cream fluid.
Grate bottarga directly over the finished plate.
Use mint and lemon zest sparingly.
Common Mistakes
Overbraising before roasting.
Insufficient caramelization.
Making Pecorino cream too thick.
Using too much bottarga.
Smoking the jus aggressively.
Plating
Spoon Pecorino cream slightly off center. Arrange roasted artichokes with caramelized surfaces visible, spoon smoked jus around them, add bottarga and crisp leaves for height, then finish with olive oil, lemon zest, mint and black pepper.
Wine Pairing
Vermentino di Gallura DOCG. Its freshness, salinity, citrus and Mediterranean herbal character connect naturally with bottarga, Pecorino and roasted artichoke. Serve at 46°F to 50°F (8°C to 10°C).
Storage & Reheating
Braised artichokes can be prepared 24 hours ahead. The jus keeps up to 3 days refrigerated. Prepare Pecorino cream the same day and roast the artichokes shortly before serving. Crisp leaves must be made fresh.
