This dish takes polenta away from its usual role as a soft accompaniment and turns it into the structural center of the plate. Saffron is infused directly into the corn, the chilled polenta is roasted until crisp outside and creamy inside, and smoked ricotta becomes the second dominant flavor. Radicchio tardivo and hazelnuts bring bitterness and texture.

Ingredients

For the saffron polenta

  • 1 cup stone ground yellow cornmeal (170 g)

  • 4 cups water (950 ml)

  • 1 generous pinch saffron threads, about 1/8 tsp (0.15 g)

  • 2 tbsp hot water (30 ml)

  • 2 tbsp unsalted butter (28 g)

  • 1 1/2 oz Parmigiano Reggiano, finely grated (40 g)

  • 1 tsp fine sea salt (6 g)

For the smoked ricotta

  • 10 oz fresh sheep’s milk ricotta (280 g)

  • 1 tbsp extra virgin olive oil (15 ml)

  • 1 tbsp whole milk (15 ml), if needed

  • 1 tsp finely grated lemon zest

  • Freshly ground black pepper

  • Fine sea salt

For the radicchio and hazelnuts

  • 2 heads radicchio tardivo, about 10 oz (280 g)

  • 1 1/2 tbsp extra virgin olive oil (22 ml)

  • 1 tbsp aged balsamic vinegar (15 ml)

  • 1 tsp honey (7 g)

  • 2 oz Piedmont hazelnuts (55 g)

  • Fine sea salt

  • Freshly ground black pepper

For the finishing emulsion

  • 1/2 cup light vegetable stock (120 ml)

  • 2 tbsp unsalted butter (28 g)

  • 1 tsp lemon juice (5 ml)

  • Fresh chives

  • A few saffron threads

  • Parmigiano Reggiano

  • Extra virgin olive oil


Preparation

  1. Bloom saffron in hot water for at least 20 minutes.

  2. Cook stone ground polenta in salted water for 35 to 45 minutes, stirring frequently. Add the saffron infusion during the final 10 minutes, then finish with butter and Parmigiano.

  3. Spread polenta 1 inch (2.5 cm) thick on a parchment lined tray, cover the surface directly and chill at least 2 hours until completely firm.

  4. Cut four clean rectangular portions and let them stand about 15 minutes before roasting.

  5. Drain and sieve the ricotta. Mix with olive oil, lemon zest, pepper and salt. Smoke very lightly with culinary wood smoke for about 2 minutes and taste before repeating.

  6. Toast hazelnuts at 325°F (165°C) for 8 to 10 minutes and crush coarsely. Char radicchio quarters in a very hot cast iron pan, then brush lightly with balsamic and honey so bitterness remains central.

  7. Pan roast the polenta in a thin layer of olive oil without moving it until a deep golden crust forms. Turn, brown the second side and baste with a little butter.

  8. Reduce vegetable stock by about one third and whisk in cold butter and lemon juice. Plate the crisp polenta with smoked ricotta, charred radicchio, hazelnuts and a small amount of emulsion, then finish with herbs, Parmigiano and saffron.


Professional Technique

Polenta should be treated almost like a piece of protein: dry surface, sufficient heat and patience. Chilling lets the starch structure set, allowing a crisp exterior and creamy reheated center. Saffron is added late enough to preserve perfume. Ricotta stays outside the polenta so the two main ingredients remain distinct.

  • Use stone ground cornmeal.

  • Cook polenta completely before chilling.

  • Add saffron near the end of cooking.

  • Chill until fully firm before cutting.

  • Do not move the polenta before the crust forms.

  • Smoke ricotta very lightly.

  • Keep radicchio bitter rather than sweet.

  • Using too much oil in the pan.

  • Over smoking the ricotta.

  • Adding too much honey to the radicchio.

  • Putting sauce underneath the entire crisp surface.


Wine Pairing

Friulano DOC Friuli Colli Orientali works because its herbal profile and almond finish echo radicchio and hazelnut while its freshness handles smoked ricotta and leaves room for saffron. Serve at 48°F to 52°F (9°C to 11°C).


Storage & Reheating

Cooked polenta can be chilled for up to 2 days before roasting. Smoked ricotta keeps up to 24 hours. Radicchio is best charred immediately before service. Reheat polenta in a hot pan, not a microwave, to preserve the crust.
