
Carciofo Ripieno di Ricotta allo Zafferano, Fondo di Carciofo e Pecorino (Italian Saffron Ricotta Artichoke)

This dish puts the artichoke at the center of the plate while saffron and sheep’s milk ricotta drive the filling. The outer leaves stay tender but structured, the heart is filled with saffron ricotta and lightly roasted, and the trimmings are transformed into a concentrated artichoke jus so the vegetable remains present in every layer.

Ingredients
For the artichokes
4 large globe artichokes
2 lemons
4 cups cold water (950 ml)
2 tbsp extra virgin olive oil (30 ml)
1 garlic clove
1/2 cup dry white wine (120 ml)
2 cups light vegetable stock (475 ml)
1 small mint sprig
Fine sea salt
Freshly ground black pepper
For the saffron ricotta filling
12 oz sheep’s milk ricotta (340 g)
2 oz Pecorino Romano, finely grated (55 g)
1 large egg yolk
1 generous pinch saffron threads, about 1/8 tsp (0.15 g)
1 tbsp hot water (15 ml)
1 tsp finely grated lemon zest
1 tbsp extra virgin olive oil (15 ml)
Freshly ground white pepper
Fine sea salt
For the artichoke jus
Reserved tender stems and trimmings
1 small shallot
1 tbsp extra virgin olive oil (15 ml)
1/3 cup dry white wine (80 ml)
1 1/2 cups vegetable stock (355 ml)
1 small thyme sprig
1 tbsp cold unsalted butter (14 g)
For finishing
2 oz Pecorino Romano, finely grated (55 g)
Fresh mentuccia or young mint leaves
Lemon zest
Extra virgin olive oil
Freshly ground black pepper
A few saffron threads
Preparation
Clean the artichokes, keeping the tender stem attached, removing tough outer leaves, trimming the top and scooping out the choke. Hold them in lemon water and reserve all tender trimmings.
Bloom saffron in hot water for 20 minutes. Drain and sieve ricotta, then mix with Pecorino, yolk, saffron infusion, lemon zest, olive oil, white pepper and salt.
Braise the artichokes upright with olive oil, garlic, white wine, vegetable stock and mint for 20 to 25 minutes until the base is tender but the flower still holds its structure.
For the jus, cook chopped artichoke stems and trimmings with shallot, deglaze with wine, add stock and thyme, simmer 20 minutes, strain and combine with some of the braising liquid. Reduce and finish with cold butter.
Fill the central cavity of each braised artichoke with saffron ricotta. Do not force filling between every leaf.
Bake at 400°F (205°C) for 12 to 15 minutes until the filling is hot and lightly golden.
Bake small piles of Pecorino at 375°F (190°C) for 5 to 7 minutes until golden, cool and break into irregular crisps.
Spoon a small pool of artichoke jus on a warm shallow plate, set the stuffed artichoke upright, add Pecorino crisps between selected leaves, and finish with mentuccia, lemon zest, black pepper, olive oil and saffron threads.
Professional Technique
The challenge is preserving the identity of the artichoke while allowing saffron and ricotta to feel central. A controlled braise keeps the vegetable structured. The filling stays mainly in the heart so the leaves retain their own texture. Turning the trimmings into jus strengthens the flavor and uses the vegetable completely.
Chef Tips
Choose firm heavy artichokes with tight leaves.
Remove the entire choke.
Keep cleaned artichokes submerged in acidulated water.
Do not overcook the first braise.
Drain ricotta thoroughly.
Use Pecorino carefully because both cheese and reduced jus contribute salt.
Finish the jus with butter only after reduction.

Overcooking until the leaves collapse.
Using wet ricotta.

Wine Pairing
Vernaccia di San Gimignano DOCG is one of the most useful partners for artichoke because its freshness, mineral character and almond like bitterness work with cynarin instead of fighting it. It also has enough structure for sheep’s milk ricotta and Pecorino. Serve at 48°F to 52°F (9°C to 11°C).
Storage & Reheating
The filling can be made 12 hours ahead. Cleaned artichokes can be held several hours in acidulated water. Braised artichokes may be refrigerated up to 24 hours before filling, and the jus up to 2 days. Bake the filled artichokes and serve immediately.
